I'm not much of a salad person, I just hate salad leaves as they got stuck in my braces and make me feel like I'm eating a tree. So after going to Greece last summer I became obsessed with Greek salads. Although the salad I make is not as good as the ones I had in Greece it is still pretty good. I could literally eat this salad for every meal of the day.
This salad contains; cucumber, tomatoes, red onion, olives, feta, oregano and olive oil. It will serve two people but obviously if you want it to serve more then you can adjust the amounts. I have also listed the ingredients in grams and teaspoons/tablespoons. So if you need different measurements convert them yourself.
Step No. 1 - Roughly chop 4 beef tomatoes, one peeled cucumber, 1/4 of a onion and 15 pitted olives ( I love Greek kalamata olives in this salad).
Step No. 2 - Place all these chopped veggies in a large salad bowl.
Step No. 3 - Then crumble between 85g and 100g of feta into a variety of sized chunks. Then place in the large salad bowl with the veggies.
Step No. 4 - Measure out 1-2 tsp. of oregano into the salad bowl.
Step No. 5 - Measure out 4 tbsp. of extra virgin olive oil.
Step No. 6 - Mix everything together using your hands.
Step No. 7 - Cut some crusty bread into slices.
Step No. 8 - Eat !

As you can see you do not have to be precise with this recipe which makes it really quick and easy to make. I sometimes also have this with chicken or a BBQ. I also substitute some of the veggies for red pepper if I do not have enough veggies.
